Vegan Blueberry Lemon Cake with Cream Cheese Frosting 

Fantastic cake, given how spongy it is, you will never guess that eggs are missing in this recipe.


* Cake ingredients

  • 1 1/2 cup flour
  • 1/2 cup vegetable oil
  • 1/2 cup coconut yogurt
  • 1 teaspoon of baking powder
  • 1 tablespoon of applesauce
  • 1 tablespoon of vanilla extract
  • 2 tablespoons of lemon juice (you can add more if needed)
  • 1 tablespoon of flax powder mixed with 1 tablespoon of water
  • 1/3 cup oat milk (just if the batter looks thick)

* Cream cheese frosting ingredients

  • 1 teaspoon of vanilla bean paste
  • 2 cups of powdered sugar
  • 4 oz vegan cream cheese
  • 112 g vegan butter


* Cake making method

  1. Combine all the ingredients for the cake
  2. Stir in 1/2 cup of blueberries rolled in flour
  3. Pour batter into 2 covered and greased 6-inch cake pans.
  4. Spread 1/2 cup of blueberries over the batter.
  5. Bake at 160 C (320 F) for 20 to 30 minutes, checking to see if the skewer inserted in the middle comes out clean but slightly sticky.

* Method of making cream cheese frosting

  1. Mix until all cream cheese frosting ingredients are combined.
  2. Continue beating until smooth, adding more if the consistency is too runny.
