Strawberry Mochi Recipe (Servings: 6)
Ingredients
Mochi:
- 110 g glutinous rice flour
- 30 g cornstarch
- 30 g granulated sugar
- 170 ml milk
- 20 g unsalted butter
- Red food coloring
Filling:
Whipped Cream:
- 260 g heavy cream
- 50 g cream cheese
- 30 g granulated sugar
Strawberry Sauce:
- 300 g fresh strawberries (chopped)
- 50 g sugar
- 1 tbsp lemon juice
Instructions
Strawberry Sauce:
- Wash and chop the strawberries into small cubes.
- In a pot, combine strawberry cubes, sugar, and lemon juice. Mix well.
- Stir over medium heat until the mixture thickens.
- Transfer the sauce into a clean bowl, cover with plastic wrap, and let it cool in the fridge.
Mochi:
- In a clean bowl, mix glutinous rice flour, cornstarch, sugar, milk, and some red food coloring.
- In a nonstick pan, pour all the batter and add unsalted butter.
- Stir over medium heat until a dough ball forms. The dough should be non-sticky, translucent, and stretchy.
- Dust the working surface and the dough with cooked glutinous rice flour. Wear gloves and knead the dough until it becomes very stretchy.
- Divide the dough into 6-8 equal pieces and roll them into round flat sheets.
Whipped Cream:
- In a clean bowl, mix softened cream cheese and sugar.
- Add heavy cream and use a hand mixer to beat until stiff peaks form.
- Transfer the whipped cream into a piping bag.
Assemble the Mochi:
- Place a mochi dough sheet over the mochi mold.
- Pipe in whipped cream, add strawberry sauce in the middle, and cover with more whipped cream.
- Wrap up the mochi and place it into a cupcake liner.
- Serve and enjoy!
