Strawberry Mochi Recipe (Servings: 6)

Ingredients

Mochi:

• 110 g glutinous rice flour
• 30 g cornstarch
• 30 g granulated sugar
• 170 ml milk
• 20 g unsalted butter
• Red food coloring

Filling:

Whipped Cream:

• 260 g heavy cream
• 50 g cream cheese
• 30 g granulated sugar

Strawberry Sauce:

• 300 g fresh strawberries (chopped)
• 50 g sugar
• 1 tbsp lemon juice

Instructions

Strawberry Sauce:

1. Wash and chop the strawberries into small cubes.
2. In a pot, combine strawberry cubes, sugar, and lemon juice. Mix well.
3. Stir over medium heat until the mixture thickens.
4. Transfer the sauce into a clean bowl, cover with plastic wrap, and let it cool in the fridge.

Mochi:

1. In a clean bowl, mix glutinous rice flour, cornstarch, sugar, milk, and some red food coloring.
2. In a nonstick pan, pour all the batter and add unsalted butter.
3. Stir over medium heat until a dough ball forms. The dough should be non-sticky, translucent, and stretchy.
4. Dust the working surface and the dough with cooked glutinous rice flour. Wear gloves and knead the dough until it becomes very stretchy.
5. Divide the dough into 6-8 equal pieces and roll them into round flat sheets.

Whipped Cream:

1. In a clean bowl, mix softened cream cheese and sugar.
2. Add heavy cream and use a hand mixer to beat until stiff peaks form.
3. Transfer the whipped cream into a piping bag.

Assemble the Mochi:

1. Place a mochi dough sheet over the mochi mold.
2. Pipe in whipped cream, add strawberry sauce in the middle, and cover with more whipped cream.
3. Wrap up the mochi and place it into a cupcake liner.
4. Serve and enjoy!
