Speculoos Biscuits

For about 40 Biscuits 
Speculoos Biscuits


  • 200g flour
  • 5g cinnamon
  • 1 pinch of 4 spices (Example : bcp)
  • 1 pinch of salt
  • 5g baking powder
  • 100g soft butter
  • 80g brown vergeoise
  • 50g caster sugar
  • 1 yellow
  • 1 tbsp of milk 


  1. Sift the flour, spices, salt and baking powder
  2. Sand the vergeoise and the butter between the palms
  3. Add the yolk and milk
  4. Then add the powders (We must obtain a smooth paste)
  5. Film and reserve 1 hour in the fridge
  6. Spread over 5mm, take out the pieces and place on baking paper 15 min 170 °
  7. Do not hesitate to put back in the freezer for 5 minutes if the dough is too hot and the cutting is difficult.
  8. Temper chocolate and dip biscuits in it.
