FOR 15 DONUTS
INGREDIENTS :
- 500g flour
- 2 eggs
- 18g fresh yeast
- 50g butter
- 3 tbsp vanilla sugar
- 1 pinch salt
- 200g milk
METHOD :
- Dissolve the yeast in warm milk
- Pour the flour, sugar and salt into the bowl of the robot with the hook. Knead at 1st speed.
- At the same time pour the milk then immediately after the beaten eggs. Always speed 1 until everything comes off.
- Integrate the soft butter in cubes. Knead until complete detachment
- 1st rise: either overnight in the fridge or at room temperature.Fridge option for me.
- Degas and spread over 1 cm.
- Cut out circles of the desired size and place on a sheet of baking paper
- 2nd shoot (about 1 hour)
- Cooking hot oil (hot heat at the beginning then medium: it should not boil at a rolling boil!) Cut the baking paper and place the dough stuck to the paper in the oil, it will come off on its own. Once golden on both sides it's good.
- Place on absorbent paper and roll in vanilla sugar
- Stuff with Nutella, compote, jam, nothing or whatever!
