INGREDIENTS :

for 4 or 5 ramekins :

  • 250g whole liquid cream.
  • 250g milk
  • 6 egg yolks
  • 70g caster sugar
  • brown sugar for decorating
  • 2 pods of vanilla 

METHOD :

  1. heat the milk, and let the scraped vanilla pods infuse
  2. Mix the yolks and sugar without whitening.
  3. Add the cold cream
  4. then the infused milk.
  5. Pour into ramekins and cook for 1h15 at 100°.
  6. Leave to set in a cool place
  7. Sprinkle a 1st thin layer of brown sugar and caramelize.Repeat a 2nd time.
