INGREDIENTS :
for 4 or 5 ramekins :
- 250g whole liquid cream.
- 250g milk
- 6 egg yolks
- 70g caster sugar
- brown sugar for decorating
- 2 pods of vanilla
METHOD :
- heat the milk, and let the scraped vanilla pods infuse
- Mix the yolks and sugar without whitening.
- Add the cold cream
- then the infused milk.
- Pour into ramekins and cook for 1h15 at 100°.
- Leave to set in a cool place
- Sprinkle a 1st thin layer of brown sugar and caramelize.Repeat a 2nd time.
