CHOCOLATE MOUSSE


INGREDIENTS (For 5 or 6 ramekins)  : 

  • 180g 70% dark chocolate
  •  75g 40% milk chocolate 
  • 150g whole liquid cream 
  • 80g milk 
  • 20g caster sugar
  •  3 eggs

METHOD :

  1. Melt the chocolates in a bain-marie.
  2. Pour in the hot liquids while emulsifying .
  3. Add the yolks .
  4. Beat the egg whites by incorporating the sugar in 2 times and integrate them into the chocolate.
