INGREDIENTS (For 5 or 6 ramekins) :
- 180g 70% dark chocolate
- 75g 40% milk chocolate
- 150g whole liquid cream
- 80g milk
- 20g caster sugar
- 3 eggs
METHOD :
- Melt the chocolates in a bain-marie.
- Pour in the hot liquids while emulsifying .
- Add the yolks .
- Beat the egg whites by incorporating the sugar in 2 times and integrate them into the chocolate.
