Crispy Basma Rolls

INGREDIENTS

• Kataifi pastry (How to Make Kataifi Pastry From Scratch)
• Ashta Cream (How to Make Ashta Cream From Scratch )
• Crushed pistachio
• Sugar syrup ( recipe in the previous reel)
• Cannoli moulds ( if you don’t have make them by scrunching up some foil )
• Melted ghee

METHOD

1. Make sure your kataifi pastry is at room temperature.
2. Preheat your oven to 200 degrees celicius.
3. Grab some of your kataifi pastry ( refer to the reel) cut the edge and roll it around your cannoli moulds, then place it in your baking tray.
4. Repeat until you have finished all your cannoli moulds, then let it airdry for about 30 minutes ( basically just leave it in the tray sitting uncovered )
5. Melt your ghee and pour it over the pastry, the ghee needs to be warm.
6. Place in the oven on the bottom rack and bake for 20-25 or until golden.
7. Remove from oven, get rid of the excess ghee.
8. Drizzle with cold sugar syrup.
9. Once the pastries have cooled, remove them from the mould.
10. Using a piping bag, fill them with ahsta and decorate with crushed pistachio and finish off with a drizzle of sugar syrup.
11. Fill them with Ashta just before serving.
