Pistachio-Cherry Honey Cake

INGREDIENTS

• 3 eggs
• 340 ml honey
• 100 g sugar
• 140 g butter
• 1 tablespoon vanilla paste

Dry’s

• 150 g finely crushed pistachios
• 340 g flour
• 1 tsp baking powder
• 1 tsp cinnamon
• 1 tsp kardamum

• + additional 100 g pistachios for decoration.

Mascarpone filling

• 600 g cold mascarpone
• 200 g cold creamcheese (16-18%)
• 150 g whipped cream
• 85 g icing sugar

• + 1 jar of cherries

METHOD

1. Bring the honey and sugar to simmer in a pot till it changes color (7-10 minutes) on medium heat. When it reaches a slightley brown color and the honey starts to rise with bubbles, turn down the heat and add the butter. 
2. In another bowl, whisk the eggs on high speed with a pinch of salt till it dubbles in size. Add vanilla. Add the honey-butter mixture slowley while still mixing on high speed (2-3 minutes). Fold in the dry ingredients (with a spacular).
3. Preheat oven to 175 C (fan oven).
4. With this recipe you can make 8-10 round layers (20-22 cm/Ø) or 4 square layers (20x30 cm). You’ll need 2-3 sheet pans with parchment attached. Both methods requires a thin layer of batter (about 2 mm) If you do round layers, make sure to draw equal circles on the parchment paper by using a 20 cm. cake pan or something similar!
5. I baked 2 layers at a time. Spread the batter onto the sheetpan within the lines you drew and bake the honeycakes for about 7-8 minutes (till they are slightly golden brown).
6. Let the layers cool down completely before filling with filling and cherries.
7. Remember to crumble one of the layers for the final coating and combine with 100 g crushed pistachios. If you don’t have any scraps you can use any type of biscuits - just crush them to use for coating.

Mascarpone filling

1. Whisk the creamcheese, mascarpone and icing sugar together with an electric mixer till combined. 
2. Fold in the cream.

To assemble the cake:

• Follow the instructions in the VIDEO INSTRUCTIONS, 
• Set in the fridge for at least 2 hours before serving.
