COCOA AND NUTELLA BRAID

*Recipe for 2 loaves*

INGREDIENTS

For the dough:

• 500g flour
• 1/2 cup sugar (100g)
• 25g fresh yeast or 8g dry yeast (1 tablespoon)
• 1 large egg
• 100ml sour cream
• 3/4 cup milk (160g)
• 100g butter
• 2/3 tablespoon salt (7g)

For the cocoa filling:

• 100g dark chocolate
• 100g butter
• 3/4 cup cocoa
• 3/4 cup powdered sugar
• 1/4 cup oil

For the second layer:

• 350g Nutella

For the sugar syrup:

• 1 cup sugar
• 1 cup water

METHOD

1. Let's start by preparing the dough:
2. In a mixer bowl with a dough hook attachment, combine milk, sour cream, sugar, egg, yeast, and flour.
3. Start mixing on low speed (about 5) and gradually add salt and butter. Continue kneading for an additional 2 minutes.
4. Increase the mixer speed to medium and knead for about 10 minutes until you get a smooth and uniform dough.
5. Cover the dough and let it rise until it doubles in size (about 1 hour).
6. For the cocoa filling: In a bowl, melt butter and dark chocolate in pulses in the microwave. Add powdered sugar, cocoa, and oil. Mix well to combine.
7. Prepare the sugar syrup in advance: Boil water and sugar until the sugar completely dissolves. Keep it in the refrigerator.
8. Once the dough has risen, divide it into 2 equal portions. Roll out each portion on a lightly floured surface into a thin rectangle.
9. Spread half of the cocoa filling evenly on half of each rectangle. Fold the other half of the dough over the filling, press the edges to seal, and roll again into a thin rectangle.
10. Spread a layer of Nutella over the entire surface of the dough (slightly warm the Nutella for easier spreading).
11. Fold the dough into 3 parts as shown in the video.
12. Roll out the dough again and use a pizza cutter to cut it into 4 cm-wide strips. Cut 4 slits on each strip, leaving the ends uncut. Twist two strips together to form a braided shape.
13. Place the braids side by side in a loaf pan, and let them rise for 35 minutes.
14. Preheat the oven to 170°C (340°F) on the turbo setting, and bake the braids for about 45 minutes or until they are golden and fully cooked.
15. Once out of the oven and while the braids are still warm, brush them with the sugar syrup. Allow them to cool and enjoy!
