Add the egg yolks and eggs, and beat well until smooth.In a saucepan, heat the milk and cream, then add the egg mixture and whisk vigorously with a wire whisk.Next, add the cinnamon stick and lemon zest.Place the saucepan over medium heat and cook, stirring constantly with a wire whisk, until the mixture thickens.Once the cream starts to boil, continue stirring and let it boil for an additional 2 minutes.Remove the cinnamon stick and lemon zest, and transfer the cream to a bowl to cool completely.Meanwhile, line a tart pan with the puff pastry and pour the cream mixture on top.Bake in the oven for 35 to 40 minutes, or until the top of the tart is nicely golden.Allow it to cool completely before removing it from the pan.
