Apricot Crumble Cake

INGREDIENTS

For cake batter

• 3 eggs
• 170 grams of sugar
• 1 packet of vanilla sugar
• 100 ml sunflower oil
• 200 grams of yoghurt
• 1 pack of baking powder
• 200-250 grams of flour
• 4-5 apricots

For the sprinkles

• 50 grams of butter
• 5 tablespoons of granulated sugar
• 100 grams of flour
• Some lemon zest

METHOD

1. First we prepare the sprinkles for the top. For the crumbles, simply put all the ingredients (flour, sugar, butter and grated lemon zest) in a bowl and knead into a crumbly dough.
2. Cut the apricots into small cubes.
3. For the cake batter:
4. We beat the eggs, granulated sugar and vanilla sugar until fluffy, then add the oil and yoghurt, sift the flour and baking powder and mix again.
5. We pour the cake batter into the mold we have oiled, sprinkle the chopped apricots on it, sprinkle the crumble dough we have prepared on top and bake it in a preheated oven at 180°C for 35 - 40 minutes.
