BLACK FOREST CAKE

INGREDIENTS

Chocolate sponge:

• 8 eggs
• 200 g sugar
• 150 g flour
• 70 g cocoa powder
• 100 g yogurt or buttermilk
• 80 g vegetable oil
• 10 g baking powder
• 5 g baking soda

Cherry marmelade & syrup:

• 400 g cherries
• 120 g sugar (you can use honey)
• 2 tbsp lemon juice
• 50 ml water
• 1 tbsp cornstarch

Buttercream:

• 200 g butter - room temp
• 300 g icing sugar
• 1 tbsp Vanilla essence

Creamcheese filling:

• 400 g creamcheese
• 200 g heavy cream or double cream
• 100 g icing sugar
• 1 tbsp Vanilla essence

METHOD

Chocolate sponge:

1. Whisk upp eggs and sugar on high speed for around 8-10 minutes till foamy.
2. Add in the oil and whisk for another 1/2 minute just till incooporated.
3. Fold in half of the dry ingrediens.
4. Add in the yogurt, fold carefully and add the remaining dry’s.
5. Pour the batter into 2 x 20 cm cakeforms and bake at 185 °C fan for 28-35 min. (a toothpick should come out with wet crumbs, when done)

Cherry marmelade & syrup:

1. Pick out the cherry seeds with a metal straw.
2. Add the cherries to a saucepan with the sugar, water, lemon juice and bring to a simmer on medium to high heat.
3. Let it simmer for 20-25 min, and then drain half of the cherry syrup.
4. Add cornstarch and then mash or blend the cherries till you have a thick consistancy.

Buttercream:

1. Whisk up all the ingredients on medium to high speed for 12 min. until fluffy.

Creamcheese filling:

1. Whisk up the double cream along with the icing sugar and vanilla till completely stiff.
2. Add in the creamcheese and keep whisking until incoorporated.

Assembling the cake:

1. Cut the cakes in half so you have 4 cake layers. 
2. Add a tiny bit of buttercream to the cakeplate, add the first cake layer, create a circle around the edge with buttercream and soak the layer with the syrup using a spoon before adding the marmelade follwowed by 1/3 of the creamcheese filling and some additional fresh cherries. 
3. Repeat 2x times before coating the whole cake with the remaining buttercream and decorate!
4. Refrediate for 3 h / preferably over night!🍒
