HomeBlueberry LEMON BLUEBERRY MINI BUNDTS July 01, 2023 0 Comments Facebook Twitter INGREDIENTS150g caster sugarZest of a whole lemon2 eggs70g vegetable oil1 teaspoon lemon extract120g flour1/2 teaspoon baking powderA pinch of baking sodaA pinch of salt2 tablespoons lemon juice1/2 cup blueberries METHODRub the lemon zest with the caster sugar until fragrant and well combined.Whisk together the eggs and sugar until pale and voluminousStream in the oil and whisk to incorporateSift in the flour, baking powder, soda and salt and fold to combine.Whisk in the lemon juice and stir in the blueberries.Scoop the batter into mini bundt pans and bake at 180C for 15-20 minutes or until a skewer inserted in the middle comes out clean.Allow the cake to cool in the pan for 10-15 minutes before inverting onto a plate.
