Ingredients
**(Makes 10 Rolls)**
- 1 roll puff pastry (240 g)
- 250 ml milk
- 2 egg yolks
- 1 teaspoon vanilla extract
- 50 g sugar
- 20 g cornstarch
- 120 ml whipped cream
- 1 egg yolk + 1 tablespoon cream, beaten (for brushing)
- Powdered sugar (for dusting)
Preparation
1- Prepare the Custard:
- In a saucepan, mix the milk, egg yolks, vanilla extract, sugar, and cornstarch.
- Heat the mixture, stirring continuously until it thickens into a custard.
- Let the custard cool completely.
- Fold the whipped cream into the cooled custard and refrigerate for an hour.
2- Prepare the Puff Pastry:
- Roll out the puff pastry and cut it into 20 evenly sized strips.
- Grease cannoli forms and wrap them with puff pastry strips, connecting two strips for each form.
3- Bake the Pastry:
- Brush the prepared rolls with a mixture of beaten egg yolk and cream.
- Bake in a preheated oven at 180°C (fan) for 15-17 minutes until golden brown.
- Once baked, remove from the oven, release from the forms, and let them cool completely.

- Retrieve the chilled cream from the refrigerator.
