Vegan Madeleine

INGREDIENTS

(for 15 pieces)
  • 125 g of T45 flour
  • 80g plant-based soy yogurt
  • 65g vegetable margarine
  • 70 g sugar
  • 30 g of vegetable milk
  • 1/2 teaspoon baking powder
  • 1 tbsp of orange blossom
  • 1 pinch of salt

PREPARATION

  1. Preheat your oven to 240 °C, static heat.
  2. Melt the margarine in a bain-marie or in the microwave.
  3. Mix the dry ingredients together then add the vegetable yogurt and the vegetable milk. Mix well.
  4. Add the margarine and orange blossom. Mix one last time.
  5. Grease your madeleine molds and fill with the dough to 3/4.
  6. Bake for 5 minutes at 240 °C, then continue cooking at 190 °C for 15 to 20 minutes.
  7. Let your madeleines cool on a rack.
