Easiest San Sebastian Cheesecake RECIPE

No magic, everything is fast, just, let's go: 

CHEESECAKE:

For a shape of 20-22cm

INGREDIENTS

  • 800 grams of curd cheese
  • 250 grams of cream 33%
  • 250 grams of mascarpone cheese
  • 6 eggs
  • 240 grams of powdered sugar
  • vanilla paste 


METHOD

  1. We heat both cheeses so that later there are no lumps and the cheesecake is easier to knead.
  2. Pour the powder, eggs, punch with a blender until a homogeneous consistency.
  3. Add cream and pasta.
  4. Pour the cheesecake into a mold with two layers of baking paper.
  5. Bake for 20 minutes at a temperature of 200 degrees. The top should burn, and inside it will be very liquid.
  6. Let it cool at room temperature and then put it in the fridge overnight, it will become a nice curd cloud.
  7. Important ! Do not add any starch or flour to the cheesecake. They are not needed here, the cheesecake should remain tender and not loose. 
 







SAUCE:

INGREDIENTS

  • 200 g milk chocolate
  • 200 g cream 33%

METHOD

  1. Pour the hot cream over the chocolate, mix with a mixer and keep overnight at room temperature
  2. Pour the sauce on the cake.
  3. ENJOY
