Almond-Nougat Crescents

INGREDIENTS

For 12 crescents 🥐 :
For the dough:

• ½ medium glass of milk (glass capacity: 140 ml)
• ½ medium glass of liquid whipped cream
• ½ medium glass of vegetable oil
• 1.5 tablespoons of sugar
• A pinch of salt
• 7 g of dry yeast
• 1 egg white (reserve the egg yolk for brushing)
• Approximately 350 g of all-purpose flour (Type 405)

For the filling:

• Almond-nougat cream

For sprinkling:

• Powdered sugar

METHOD

1. Preheat the oven to 180 degrees Celsius (fan-assisted).
2. Take lukewarm milk, yeast, and sugar and place them in a mixing bowl. Mix them well together.
3. Let the mixture rest for 5 minutes.
4. Then add whipped cream, salt, egg white, and vegetable oil, and mix everything together. Finally, gradually add the flour and knead until you have a soft dough.
5. Cover the dough and let it rise for at least 40 minutes in a warm place.
6. Shape small balls out of the risen dough, about the size of a mandarin.
7. Press the balls slightly flat, spread almond-nougat cream on them, and seal them back up. Then roll them into balls.
8. Using a rolling pin or your palm, flatten the sealed side, and make cuts on half of the balls, shaping them into Crescents.
9. Place the crescents on a baking sheet and let them rise, covered with a cloth, for 10 minutes.
10. Mix a tablespoon of milk with an egg yolk and brush the crescents with it sprinkle them with blanched almonds and without pressing them down.
11. Bake them in the preheated oven at 180 degrees Celsius until they turn golden brown.
12. After removing the Crescents from the oven, cover them with a cloth.
13. Finally, you can sprinkle them with powdered sugar.
