No bake Raffaello Tiramisu

INGREDIENTS

• 250 g Mascarpone
• 16 g vanilla sugar
• 16 g whipped cream stabilizer
• 350 g heavy cream
• 30 g grated coconut
• 175 g sweetened condensed milk
• Ladyfingers
• 200 ml coconut milk

Decoration:

• Grated coconut
• Raffaello
• Hazelnut

METHOD

1. Place the Mascarpone and vanilla sugar together and beat them in a deep bowl. Stir for 1 minute. Gradually add the unwhipped heavy cream until the cream forms peaks. Add the condensed milk and grated coconut. Mix until fully combined.
2. Pour the coconut milk into a bowl.
3. Dip the ladyfingers one by one into the coconut milk and arrange them on the bottom of a casserole dish/baking dish.
4. Spoon half of the cream over the ladyfingers and spread it evenly.
5. Arrange another layer of ladyfingers over the cream and top it with the remaining cream. Spread it evenly. Sprinkle some grated coconut on top. Chill the coconut tiramisu for 4-5 hours, covered, to set.
6. Ideally, let it sit overnight for the flavors to meld.
7. Cut the coconut tiramisu into pieces. Garnish each piece with grated coconut, chopped hazelnuts, and Raffaellos.
