American Blueberry Muffins

INGREDIENTS

For the crumb topping:

• 60 g flour
• 100 g sugar
• 50 g cold butter

For the muffins:
*Liquid ingredients:

• 80 ml vegetable oil
• 3 medium-sized eggs
• 100 g sugar
• 125 ml milk
• 70 ml cream
• 100 g plain yogurt
• one teaspoon vanilla extract

*Dry ingredients:

• 280 g flour
• 1.5 tsp baking powder
• 1/4 tsp salt

Additional ingredient:

• 150 g blueberries, coated with 1/2 tbsp flour

METHOD

1. Start by preparing the crumb topping. In a small bowl, mix together the flour, sugar, and cold butter. Rub the ingredients together with your fingers until large crumbs form. Set the crumb topping aside and keep it in the refrigerator.
2. Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit) and line a muffin tin with paper liners.
3. In a bowl, whisk together all the liquid ingredients: vegetable oil, eggs, sugar, milk, cream and yogurt.
4. In a separate bowl, combine the dry ingredients: flour, baking powder, and salt.
5. Add the liquid ingredients to the dry ingredients and gently mix. Stir just until no dry flour is visible. Be careful not to overmix.
6. Gently fold the flour-coated blueberries into the batter.
7. Fill the prepared muffin cups, filling each about 3/4 full. Sprinkle the crumb topping over each muffin.
8. Bake the muffins for 8 minutes, then reduce the heat to 180 degrees Celsius (350 degrees Fahrenheit). Continue baking for another 15 minutes or until a toothpick inserted into the center comes out clean.
9. Allow the muffins to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely.
10. Once the muffins have cooled, they are ready to be enjoyed. Serve them with a hot cup of coffee or tea for a delightful treat!
