TIRAMISU ICE CREAM CAKE

INGREDIENTS

• 18-20 ladyfinger biscuits (sugar-coated)
• cold coffee

Cream:

• 400g heavy cream
• 350g mascarpone cheese
• 1.5 tbsp powdered sugar
• 1 tsp vanilla extract

For garnish:

• Whipped cream
• Cocoa powder

METHOD

1. In a mixing bowl, beat the mascarpone cheese, powdered sugar, and vanilla extract until creamy. Gradually add the heavy cream while continuing to beat. Keep beating until the cream thickens.
2. Line a loaf pan with plastic wrap. Pour a layer of the cream mixture into the pan and smooth it out.
3. Dip the ladyfinger biscuits briefly into the cold coffee and place them over the cream layer until fully covered.
4. Repeat the process, adding another layer of cream and ladyfinger biscuits, and finish with a final layer of cream.
5. Place the ice cream cake in the freezer, preferably overnight, to set.
6. To serve, invert the ice cream cake onto a serving plate, remove the plastic wrap, and garnish with whipped cream and a dusting of cocoa powder.
