- Allow it to triple in size, about 7-8 hours at 27-28°C.

- Mix the bread flour, sugar, salt, milk, egg, and the sweet stiff starter until the dough comes together and is strong.
- Gradually add the unsalted butter in 2-3 batches, kneading until fully incorporated and the dough achieves the windowpane test.
- Bulk proof the dough for 2 hours at 28°C.
3- Shape the Dough :
- Punch down the dough and divide it into 8 equal parts.
- Roll each piece into a smooth ball and let rest for 15 minutes.
- Roll out each ball and wrap it with your favorite fillings (e.g., mozzarella cheese and luncheon meat).
4- Final Proof and Bake :
- Sprinkle water on the buns and coat them with Parmesan cheese.
- Final proof at 28°C for 3-3.5 hours or until the dough rises to 1.5 times its original size.
- Score a straight line in the middle of each bun.
- Pipe the garlic butter mixture into the groove.
- Bake at 180°C for 18-20 minutes.
