Ingredients
(15cm pan)
- 400g cream cheese
- 120g sugar
- 3 eggs (150g)
- 10g cornstarch
- 200g heavy cream
- 1 vanilla bean (you can skip or replace it with vanilla extract)
Instructions
- Soften the cream cheese at room temperature in a bowl.
- Add sugar and vanilla bean, and mix until smooth with a spatula.
- Sieve in the cornstarch and mix well.
- Add eggs one at a time, whisking well after each addition.
- Add heavy cream and whisk until smooth.
- Sieve the batter once or twice, then pour it into a lined pan.
- Bake at 230°C (446°F) for 20 minutes.
- When it’s done baking, open the oven door and leave the cheesecake in the oven for 10 minutes.
