San Sebastian x Tiramisu

INGREDIENTS

(Size of the springform pan: 26cm)
For the base:

• 18-20 ladyfinger biscuits
• 1-2 cups of coffee

• 3 eggs
• 250g powdered sugar

• 500g Quark (you can also use cream cheese)
• 300g cream cheese
• 250g Mascarpone (the original recipe uses 200g of clotted cream)
• 400ml liquid cream
• 2 packets of vanilla
• 1 tablespoon of cornstarch
• 3 tablespoons of flour
• 50ml coffee

For the cream:

• 250g Mascarpone
• 200ml heavy cream
• 2 tablespoons of sugar
• 2 packets of cream stiffener

For the topping:

• Cocoa powder

METHOD

1. First, prepare the coffee and let it cool. Then dip the ladyfinger biscuits in the coffee and arrange them in the springform pan.
2. Beat the eggs and powdered sugar with a mixer for 1-2 minutes. Set this mixture aside and in a separate bowl, beat the Quark, Mascarpone, and cream cheese.
3. Pour in the liquid cream and beat again. Then add the vanilla, cornstarch, and flour, and mix well.
4. Add the beaten egg and powdered sugar mixture to the bowl and mix again. Finally, add the cooled coffee and mix until well combined. Pour the mixture into the springform pan.
5. Preheat the oven to 200 degrees Celsius and place the pan inside. Increase the temperature to 250 degrees Celsius and bake for 25-30 minutes until the top is golden brown.
6. Let it rest for 4-5 hours. For the cream topping, beat the Mascarpone for 1-2 minutes. Add the heavy cream, cream stiffener, and sugar, then mix well. Spread this cream mixture over the cake.
7. Finally, sprinkle cocoa powder on top. Enjoy!
