BROOKIES RECIPE

INGREDIENTS

• 240g 60% dark chocolate
• 60g butter
• 100g light brown sugar
• 20g white sugar
• 100g eggs (weighed without the shell)
• 80g bread flour (W175) or all-purpose flour
• 4g baking soda

FOOLPROOF GANACHE:

• 130g 55% Equatoriale Noir chocolate
• 130g heavy cream with minimum 35% fat content
• 19g butter
• A pinch of salt

METHOD

1. Start by hand beating the sugars, eggs, and salt for 1 to 2 minutes.
2. Melt the chocolate and butter together. Let it cool slightly and pour it over the previous mixture.
3. Sift the flour and baking soda over the mixture.
4. Mix well. Tip: Don't overmix the batter. If it becomes too runny, chill it in the fridge for a while.
5. Preheat the oven to 180°C with heat from top and bottom.
6. Take 2 tablespoons of dough per cookie and place them on a baking tray lined with parchment paper.
7. Bake for about 9-10 minutes.
8. Remove from the oven and let them cool completely.
9. Meanwhile, prepare the filling. Chop the chocolate. In a separate saucepan, heat the cream until it's just about to boil. Pour it over the chocolate, let it sit for 1 minute, and gently mix until you obtain a shiny cream. Gradually add the butter and salt. Stir well. Cover with plastic wrap, allowing it to touch the surface of the ganache, and let it cool (4-6 hours).

ASSEMBLY:

1. Take 2 cookies and fill them with a spoonful of ganache.
2. You'll see how crazy they are!
3. Enjoy!
