Honey Cake (Medovik) 🍯
Would you believe me if I told you that this super delicious honey cake can be ready in just 30 minutes? No kneading and no rolling required! This easy Medovik recipe combines a soft, honey-flavored cake with a creamy, caramel frosting for a delightful dessert that's sure to impress.
Ingredients
Cake:
- 60 g sugar
- 250 g all-purpose flour
- 2 eggs
- 100 g honey
- 150 g butter
- 1 tsp baking soda
- A pinch of salt
Frosting:
- 300 g full-fat cream fraiche
- 200 g sweetened condensed milk caramel
Instructions
Prepare the Cake:
- Place the honey, sugar, and butter in a non-stick pot. Mix over low heat until the butter melts.
- Add baking soda and mix for 2-3 minutes. Remove the pot from the heat and let it cool down.
- Transfer the mixture into a large bowl, add salt and eggs, and whisk well. Add flour and mix until no lumps remain.
- Pour half of the batter into a baking tray and even it out with a spoon. Bake in a preheated oven at 180°C (356°F) for 7-8 minutes.
- Repeat with the remaining batter to make another layer.
- Divide each baked layer into 4 pieces. Crush the scraps with a rolling pin to make breadcrumbs.
Prepare the Frosting:
- In a large bowl, whisk together full-fat cream fraiche and caramel until smooth.
Assemble the Cake:
- Spread frosting on each layer of the cake.
- Dust the top and sides with the crushed breadcrumbs.
- Refrigerate the cake overnight or for at least 4 hours.
