Ingredients
Dough:
- 400g flour
- 100ml milk
- 7g dry brewer's yeast
- 1 egg
- 100g butter
- 100g sugar
- Lemon zest
- Salt
Filling:
- 400g ricotta
- 1 egg
- 1 tbsp cornstarch
- 3 tbsp brown sugar
- Lemon zest 🍋
- Sultanas (to taste)
Preparation
1. Activate the Yeast:
- Place the yeast in a glass.
- Add a little warm milk and mix well with a teaspoon until the yeast dissolves.
2. Prepare the Dough:
- In a container, melt the butter completely.
- Add the sugar, salt, lemon zest, and egg.
- Mix for 2-3 minutes until it becomes a creamy mixture.
- Sift the flour into a large bowl. Make a well in the center and pour in the liquid mixture, stirring continuously with a wooden spoon.
- When the dough becomes too thick to stir, start kneading by hand for 7-8 minutes until smooth and elastic.
- Form the dough into a ball and let it rise in the bowl in a warm place until it doubles in volume (about 2 hours).
3. Prepare the Filling:
- Place the ricotta, brown sugar, cornstarch, egg, lemon zest, and sultanas in a container.
- Mix well and leave to rest in the fridge.
4. Assemble the Cheeses:
- Once the dough has risen, roll it out into a rectangle approximately 20 x 40 cm.
- Cut the dough into 8 equal squares.
- Place 1 tablespoon of filling in the center of each square (don't overfill to avoid bursting).
- Bring opposite corners of the square together over the filling and press firmly.
- Place the formed cheeses on a baking tray covered with baking paper, leaving space between them.
- Cover and let rise for 30 minutes.
5. Bake:
- Preheat the oven to 190°C (374°F).
- Brush the cheeses with an egg yolk and milk mixture before baking.
- Bake on medium height for 25-30 minutes until golden brown.
6. Serve:
- Remove from the oven and let them cool slightly in the pan.
- Sprinkle with icing sugar.
- Serve slightly warm or completely cold.
