The Famous Meringue Roll

INGREDIENTS

For the Sponge Cake:

• 7 egg whites (room temperature)
• 260g sugar
• 2 tbsp corn starch
• ~1 tbsp lemon juice
• A pinch of salt
• Chopped nuts to taste, sliced almonds (optional)

For the Cream:

• 250g heavy cream (33% fat)
• 150g cream cheese/cottage cheese
• 8g vanilla sugar (one packet)
• 20g powdered sugar (to taste)
• Any type of berries, jam, or curd

For the Berry Jam:

• 300g frozen berries (cherries, raspberries, currants, strawberries)
• 60g sugar
• 12g corn starch
• 30g water

METHOD

Sponge Cake Preparation:

1. Preheat the oven to 150°C (302°F) in “top-bottom” mode. If using a gas oven, reduce the temperature.
2. Separate the egg whites from the yolks. Add a pinch of salt and lemon juice to the egg whites and beat at medium speed until foamy.
3. Gradually add the sugar while beating until stiff peaks form.
4. Sift the corn starch into the mixture and beat at low speed until homogeneous.
5. Spread the mixture on parchment paper, preferably with a non-stick coating. Sprinkle with nuts if desired.
6. Bake for 30 minutes. The cake should be firm to the touch.
7. Remove the cake from the oven and let it cool. Cover with another sheet of parchment paper, place a towel on top, and flip. Remove the parchment paper.

Cream Preparation:

1. Put all the cream ingredients (heavy cream, cream cheese/cottage cheese, vanilla sugar, and powdered sugar) in a bowl.
2. Whip until homogeneous and smooth.

Assembling the Roll:

1. Spread the whipped cream evenly over the cooled sponge cake.
2. Add berries or berry jam over the cream layer.
3. Roll the cake gently, using the parchment paper to help.
4. Trim the uneven edges with a knife.
5. Refrigerate the roll for 2 hours.
6. Decorate as desired before serving.

Berry Jam Preparation:

1. Mix the berries with the sugar in a saucepan. Cook over low heat until the sugar dissolves, then bring to a boil.
2. Dissolve the corn starch in water and pour into the boiling berries. Cook for 1 minute, then remove from heat.
3. Cover the jam with plastic wrap “in contact” and refrigerate until completely cool.
