Lemon Blueberry Loaf! One of my all-time favorite recipes 🫐🍋 This loaf is bursting with fresh blueberries and a zesty lemon flavor, perfect for a summer treat.
Ingredients
- 1 cup granulated sugar
- 1/2 cup unsalted butter, room temperature
- 2 large eggs, room temperature
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
- 1 1/2 cups all-purpose flour + 1-2 tablespoons for coating blueberries
- 1 teaspoon baking powder
- 1/2 cup whole milk
- 1 cup fresh blueberries
Directions
- Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
- In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
- In a small bowl, mix the blueberries with 1-2 tablespoons of flour until the blueberries are coated. Set side.
- In a separate bowl, cream together the butter and sugar until light and fluffy, about 3 to 5 minutes.
- Beat in the eggs, lemon juice, and lemon zest.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Slowly add in the milk and mix until the batter comes together, scraping down the sides of the bowl as needed.
- Gently fold in the coated blueberries.
- Pour the batter into the prepared loaf pan and bake for 55-65 minutes, or until the top is cracked, raised, golden brown, and firm to the touch. A toothpick inserted into the center should come out clean.
- Let the loaf cool completely before slicing and enjoying!
